New menu at Emeril's Tchoup Chop at Universal Orlando

Diners at Emeril's Tchoup Chop restaurant at Universal Orlando's Royal Pacific Resort may soon notice some changes. Chef Ryan Vargas has taken over as chef de cuisine, coming from a background of the Four Seasons Resort in Hualalai, the Ritz Carlton in Kapalua Maui and the Four Seasons Resort in Palm Beach, where he was named "Palm Beach County Best Chef" in 2011. Andy Vaughn has taken over general manager duties for the restaurant.

The kitchen will benefit from a new Japanese robata grill, which 'sears meat, seafood and vegetables at up to 1,000F, allowing dishes to maintain their natural juices and flavor." This cooking method gives way to a new menu, featuring sides, appetizers and entrees all cooked in the robata. Items include "Japanese eggplant with a chili mint sauce, pork belly Tocino and lemongrass-marinated chicken wing with spicy chili sauce." In addition, the sushi bar has been expanded and the cocktail offerings have been updated.

Tchoup Chop is open daily for lunch and dinner.
