About Chef Francisco “Paco” Moran
Chef Francisco “Paco” Moran is Executive Chef of the critically acclaimed Los Angeles mariscos restaurant, Loreto, and its companion garden lunch stand, Za Za Za . Paco’s menus at Loreto are kaleidoscopic in flavor, influences and ingredients, and are inspired by Baja and his hometown of Los Angeles. Since its opening in 2023, Loreto has earned a devoted following, and high praise from the likes of The Los Angeles Times, Eater and The Infatuation.
A graduate of Le Cordon Bleu, Paco has spent nearly 20 years as a professional chef. Prior to helming the kitchen at Loreto, Paco cut his teeth at such venerated restaurants as Patina and Restaurante Martín Berasategui.
