Spring menu updates are rolling out across Walt Disney World, and one of the most noticeable refreshes is happening at The Hollywood Brown Derby inside Disney’s Hollywood Studios.
Disney shared a look Thursday at several new dishes that are now available at the signature restaurant, and the lineup leans heavily on seasonal ingredients, colorful presentations, and a mix of lighter options alongside classic favorites.

Seafood plays a big role in the update. One of the newly introduced dishes is Hamachi à la Newburg, which features thinly sliced yellowtail paired with rich, creamy elements and bright garnishes. It’s the kind of dish that feels right at home in the Brown Derby, refined without being overly complicated.

Guests looking for vegetable-forward options will notice a few new additions as well. The Stuffed Butternut Squash combines warm, earthy flavors with a beautiful presentation, while the Beet and Kale Salad offers a fresh, vibrant option that adds more variety to the menu. These new dishes help round out the lineup for diners who prefer something lighter or plant-focused.


For those sticking with a more traditional entrée, the Filet Mignon remains a staple, paired this season with updated accompaniments like Glazed Carrots, adding a pop of color and sweetness to the plate.

Another new addition, Seafood Fregola, blends shellfish with small pasta pearls, creating a dish that feels hearty while still fitting the spring theme.

The new offerings strike a balance between familiar favorites and a fresh take on seasonal flavors. It’s a refresh aimed at repeat guests as much as first-time diners, giving everyone something new to notice when perusing the menu.
