
When Valentine’s Day falls during the week, I often shift my plans to the nearest weekend to celebrate. While I am not a massive fan of this particular holiday, I’ll take any excuse to have a bit of fun and enjoy something special. Since V-Day was coming in fast on my busiest day of the week, Friday, all my plans went awry and now I am determined to cook up something special over the weekend.
Last weekend, we gave you two Disney Parks recipes to kick things off. Now, we are adding a few more to that list to make your celebration even better over the weekend. Let’s face it: you don’t need to tell me twice to indulge in Disney food and beverages at home. I’m all in. We’ve already shared the main dish from Cinderella’s Royal Table in Magic Kingdom at Walt Disney World and dessert from Napa Rose Disney’s Grand Californian Hotel & Spa at the Disneyland Resort. Now, let’s make a Rustic Bruschetta from Wine Country Trattoria and a Chocolate Martini from the Disney Recipe Vault to round things out!
RUSTIC BRUSCHETTA from Wine Country Trattoria, Disney California Adventure Park
Serves 6 to 8, as an appetizer
INGREDIENTS
- 1 large onion, sliced
- 7 tablespoons olive oil, divided
- 1/2 teaspoon coarse salt, divided
- 1/2 cup sliced shiitake mushrooms
- 1/2 cup sliced crimini mushrooms
- 1/2 cup sliced artichoke hearts
- 1/4 cup sliced sun-dried tomatoes
- 1 medium French baguette
- 1 cup mascarpone cheese
- 3 cloves minced garlic
- 1/2 shallot, minced
- 1/4 teaspoon ground black pepper
- Shaved Parmesan cheese, for garnish
DIRECTIONS:
- Preheat oven to 400°F.
- Combine onion and 2 tablespoons olive oil in large sauté pan over medium heat. Add 1/4 teaspoon salt. Cook until onions are soft and caramelized, about 20 minutes. Set aside.
- Meanwhile, toss mushrooms and artichoke hearts with 3 tablespoons olive oil on a medium baking sheet. Roast for 10 to 15 minutes, until golden brown. Remove from oven and reduce temperature to 300°F.
- Combine caramelized onions, mushrooms, artichoke hearts, and sun-dried tomatoes in a large bowl. Set aside.
- Cut baguette into 1/4-inch-thick slices. Place slices on a large baking sheet, and drizzle with remaining 2 tablespoons oil. Bake for 15 to 20 minutes, until crisp but not browned. Set aside.
- Whisk together mascarpone cheese, garlic, shallots, remaining 1/4 teaspoon salt, and 1/4 teaspoon pepper in a small bowl.
- Spread toasted baguette slices with the mascarpone mixture, then top with mushroom mixture. Garnish with shaved Parmesan cheese.

CHOCOLATE MARTINI from the Disney Recipe Vault
Serves 1
INGREDIENTS
- 1 ounce chocolate liqueur
- 1/2 ounce vanilla vodka
- 1/2 ounce hazelnut liqueur
- 1/2 ounce crème de cacoa liqueur
- Chocolate stick, for garnish
DIRECTIONS
- Combine ingredients in an ice-filled shaker, shake, and strain into martini glass. Garnish with chocolate stick.
