Fans of Gideon’s Bakehouse have something brand new to check out at Disney Springs.
Six Ravens, the long-awaited sister concept from Gideon’s founder Steve Lewis, is scheduled to soft open on Monday, August 3, just a few storefronts away from the wildly popular bakery. While Gideon’s has built its reputation on massive cookies and decadent cakes, Six Ravens heads in a different direction with a menu focused primarily on savory comfort food, local partnerships, and a fresh chapter in the ever-growing Gideon’s story.
The centerpiece of the menu is something called coffyns. Despite the spooky name, they’re essentially stuffed yeast-roll sandwiches filled with a variety of savory ingredients. Lewis told the Orlando Sentinel the idea has been years in the making.
“At first, it was a pie crust, but it felt too traditional. Eventually, we found ourselves moving toward a soft, stuffed yeast roll, inspired by a childhood love I had for the big, fat yeast roll at Quincy’s [Family SteakHouse]. If you know, you know. It took a couple of years playing around, but I think we landed in a good place.”

One thing that sets Six Ravens apart is its focus on supporting other local businesses. Rather than creating every menu item entirely in-house, the restaurant is partnering with several well-known Central Florida favorites, including Red Panda Noodle, Pizza Bruno, Smoke & Donuts, Pink Salamander, and Papi’s Burritos.
Lewis said that has always been part of the vision.
“From the outset, the concept of Six Ravens has been about paying it forward.”
He also noted that the collaborations could encourage guests to discover more of Orlando’s food scene.
“At the very least, it incentivizes guests to visit [and sample] more local fare. We’re also highlighting beer from Ravenous Pig Brewing Co., Sideward Brewing Co. and Crooked Can, as well.”
Although the menu leans savory, dessert hasn’t been forgotten. Opening day will feature a single sweet offering called The Tart’s Tempest, a chocolate chip tart filled with rich chocolate fudge and topped with fresh raspberry jam. Lewis says more desserts, including collaborations with local bakeries, are already in the works.
Guests can also expect plenty of exclusive merchandise, something Gideon’s has become famous for over the years.

Lewis explained that expanding Gideon’s itself never felt like the right move.
“I knew I couldn’t grow it. To branch out, to let things expand into the world would ruin its sense of exclusivity and community.”
Instead, Six Ravens became one of several ideas developed as a way to expand the world and storytelling surrounding Gideon’s.
The new shop will also have its own atmosphere, which Lewis describes as even moodier than its famous neighbor.
“A true escape from the sunshine of our burning world.”
If that sounds appealing, be prepared to wait. Disney Springs is expecting strong demand during the soft opening, and Six Ravens plans to use a virtual queue, similar to Gideon’s Bakehouse, to help manage crowds. Guests will be added to the queue on a first-come, first-served basis, allowing them to explore Disney Springs while waiting for their turn.
