Happy September 1! We’re officially in the BER months… and Gideon’s Bakehouse in Disney Springs, famous for their nearly half-pound cookies and over-the-top cake slices, has unveiled their latest lineup of autumnal flavors!
This month’s limited-edition menu at Disney Springs brings back Dr. Tobias Brimstone, Gideon’s mysterious adventurer who hasn’t visited the Bakehouse since January 2022. Along with him comes a Pumpkin Bread Chocolate Chip Cookie, Pumpkin Caramel Double Frosted Cake, Pumpkin Chai Nitro Cold Brew, and a new collection of Brimstone merchandise.
Joe Rohde… Is That You?
Dr. Tobias Brimstone bears quite a resemblance to legendary Walt Disney Imagineer and real-life adventuer Joe Rohde; from the character’s adventurous spirit, facial features, and that famous earring.
Now Brimstone has been transformed into one of Gideon’s adorable “Morsel” characters for September, appearing on the month’s collectible menu and several new pieces of merchandise.
There also appears to be more happening with Brimstone than Gideon’s is ready to reveal, with the bakery teasing a mystery surrounding the explorer and more news to come… But first, pumpkin.
Pumpkin Bread Chocolate Chip Cookie
“This mammoth dessert is filled with real Pumpkin, Dr. Brimstone’s Pumpkin Spice Blend, a little bit of Chocolate on the inside (not too much, so don’t worry if you’re not a chocolate fan), and a generous topping of Pumpkin Butter Crumbs!”
The Pumpkin Bread Chocolate Chip Cookie is available every day throughout September with a limit of two per person.
Pumpkin Caramel Double Frosted Cake
“This satisfying cake is covered in a full layer of Caramel Buttercream then another full layer of our Pumpkin Cream Cheese Buttercream! Underneath you will find a unique Vanilla Cinnamon Swirl Cake that is both soft and crumbly.”
Slices are available Wednesdays and Saturdays throughout September. Whole cakes can also be preordered this month at Gideon’s original East End Market location.

Exclusively at Gideon’s Disney Springs location, the Pumpkin Chai Nitro Cold Brew is also back for September.

Something Bigger Is Coming in October
October marks 10 years since Gideon’s opened its original East End Market storefront, which debuted in October 2016. Gideon’s says it has been working on a major project for most of the year and that this month’s Dr. Tobias artwork offers a small hint of what’s coming… The bakery isn’t saying much more yet, other than promising a big announcement as its anniversary approaches.
So for now, we have pumpkin, an adorable miniature version of a suspiciously familiar adventurer, and a little mystery to solve!
