Hey Gideon’s lovers! Earlier this week, we shared the leaked menu from Six Ravens, the highly anticipated savory sister concept to Gideon’s Bakehouse at Disney Springs. As exciting as that first look was, I certainly wasn’t expecting even more details to arrive so soon! Yesterday, the creative force behind the project clarified several of the menu items and their local collaborations that have me even more excited to see this place open. But before we dive into what’s coming next, let’s take a moment to appreciate the original cookie kingdom. Gideon’s Bakehouse has just unveiled its latest limited-time creation for July, and it looks every bit as irresistible as you’d expect. Let’s take a look!
Gideon’s Bakehouse:
We are already nearing the end of July, which means that the final flavor creation at Gideon’s Bakehouse has arrived. I love the citrus influences that come with summer menu options; they just feel so fresh and interesting. I’ll let you have all the details in their own words:
The Third and Final Flavor for July is the Key Lime Pie Chocolate Chip Cookie! Imagine a Vanilla Bean Cookie Dough infused with Florida Key Lime Juice and covered with Chocolate Chips and our special Key Lime Pie Crumbs! Not too tart but just enough Key Lime to make you smile! Or better yet, don’t imagine. Come and get one! Key Lime is available through the rest of July at both locations. Limit 2 per person!
Don’t forget that Bonnie’s Lemonade Cold Brew is available each weekend at Gideon’s in Disney Springs this month, and you don’t want to miss it! She’s so refreshing!
Reminder that Christmas in July is silly, but Kris Kringle’s Cookie Bites are available at both locations each weekend this month while supplies last.
Menu Collectors: With a 3rd Cookie comes a 3rd Menu featuring Stuart & Bonnie Morsels together! We do have one more piece of merch incoming, but it’s running a bit late and will get a separate post.

Six Ravens Update:
Now, let’s move over to what is easily my most anticipated Disney Springs opening of the year, Six Ravens. Since the savory menu first surfaced earlier this week, the creators have shared a few clarifications, and while the menu itself hasn’t changed much, they have highlighted the local collaborations that bring so many of these dishes to life. I absolutely love this approach.
One of the things that has always set Gideon’s Bakehouse apart is its attention to detail. It’s never just been about creating something that looks good on social media. The team genuinely cares about the quality of every ingredient that goes into their food. I’ll never forget when Gideon’s pulled menu items from the shelves because the team wasn’t comfortable serving an ingredient they didn’t feel met their standards. It couldn’t have been an easy decision, but it said everything about how seriously they take quality over convenience.
Seeing that same philosophy carry over to Six Ravens through partnerships with local producers makes me even more excited for what’s to come. Supporting neighboring businesses while building a menu around fresh, thoughtfully sourced ingredients feels completely on brand for a concept built on creativity, craftsmanship, and authenticity. The Imperial Idol: Mildly Spicy Chicken with Potato & Carrot Coconut Curry, in a Fried Garlic covered Coffyn, harmonizing to create this flavorful offering. Pairing: Red Panda’s Dipping Sauce

The Moreish Monk: Middle Ages Grilled Cheese using Vermont White Cheddar, Havarti cheese, and House Tomato Jam wrapped in a Parmesan smothered Coffyn. Pairing: Wolf Peach Dipping Sauce
The Forager’s Find: Our Spiced Roasted Sweet Potatoes, Black Bean Corn Salsa, and Queso Cotija in a Pumpkin Seed topped Coffyn. Pairing: Tropic of Mango Aioli Dip
The Side:
Tell Tale Tatties: A mini bucket of Baked Smashed Potatoes perfectly seasoned with the King’s spices and served with our amazing Realm Famous Honey Mustard.
The Dessert:
The Tarts Tempest: A Gideon’s Chocolate Chip Cookie Tart filled with Rich Chocolate Fudge & topped with our house Raspberry Jam.
