Birthday Cakes and Blackberries
There’s no flavor more celebratory than this! Mouthfuls of our homemade take on a rainbow-flecked ‘confetti’ cake are generously strewn throughout salted vanilla ice cream and wrapped with a ribbon of Oregon Growers jam—made from the plump, juicy blackberries the PNW is famous for. You don’t need to be marking another trip ‘round the sun to indulge; this classic cake-and-ice-cream combo always feels like a party.
Oishii Strawberry Pretzel Salad
A classic Midwestern ‘salad’ meets viral Japanese strawberries. Oishii strawberries—perfectly ripened, vertically grown, and intensely aromatic—have captured everyone’s attention, including ours. To showcase their fragrant sweetness in true Salt & Straw style, we turned to a crowd-pleasing summertime dessert: Strawberry Pretzel Salad. Instead of the traditional Jell-O topping, we created a glossy jelly packed with vibrant Oishii berries. Crunchy pretzel crumble folds into cream cheese ice cream along with the strawberry jelly, blending the salad’s iconic layers into a stunningly swirled scoop. It’s a fresh new flavor you’ll crave long after the potluck ends.
Goat Cheese Marionberry Habanero
A delectable tongue twister of ripe berries, tangy goat cheese, and complex habanero heat that reveals itself slowly with a pleasant burn. This eagerly awaited favorite returns, featuring fresh goat cheese from renowned California cheesemaker Cypress Grove. A fruity, fiery jam, starring marionberries steeped with habanero peppers, winds its way through our distinctive ice cream. The sweetness of the fruit, pioneered and perfected here in Oregon, provides the perfect backdrop for the punch of heat and pops against the creamy funk of the goat cheese.
Banana Bread with Strawberry Jam (v)
We snuck bananas into the Berries series, if only because we’re as obsessed with thiscollaboration with GoNanas as you are. Heaps of ripe bananas, roasted with brown sugar and molasses and spiked with black rum, churn into coconut cream along with salt and caramel for a rich, caramelized scoop. Hunks of chewy GoNanas Salted Caramel Banana Bread taste just like mouthfuls of sticky toffee pudding, balanced by the fresh fruitiness of bright strawberry jam that ripples through. Sliced or straight out of the pan, GoNanas banana bread couldn’t get any more craveable. Until we froze it.
Huckleberry Cornbread Pudding
Piping hot cornbread, fresh from the cast iron, slathered with wild huckleberry jam—but make it ice cream. Huckleberries are nearly impossible to cultivate, so we turned to our friends at NW Wild Foods to handpick bushels of these intensely sweet berries from the foothills of Priest Lake, Idaho. Churned into a striking purple ice cream, we layer in cornbread two ways: crumbles of rustic buttermilk cornbread scattered throughout, and a smooth cornbread pudding that brings an extra pop of nutty comfort. Hard to track down but easy to love, this scoop makes the hunt for huckleberries worth it.
