Menu details released for Tiffins, new restaurant coming to Disney's Animal Kingdom tiffins

The Disney Parks Blog has shared details about the menu at the new Animal Kingdom restaurant, Tiffins, set to open this summer. The menu will celebrate the art of traveling and will feature foods from Europe, Africa, Asia, and the Americas, the locations that inspired Animal Kingdom.



Appetizers will include a Lobster-Popcorn Thai Curry Soup with Basil and Peanuts to represent Asia and Africa. Europe will be represented by Marinated Grilled Octopus, South America offers a Sustainable Seasonal Fish Crudo, and North America flavors are found in a Salad of roasted baby beets and goat cheese with walnut granola and a sun-dried cherry vinaigrette.

The entrees available are from Africa: Berber-Spiced Lamp Chop with Mustard Greens, Lentil Stew, and Mint Chutney; South America: Berkshire Pork Tenderloin with Huitlacoche Tamale, Hominy Succotash, and Red Mole Sauce; Asia: Miso-glazed Black Cod with Forbidden Rice in Steamed Bok Choy with Turmeric Sauce and a vegetarian dish, Roasted Market Vegetable Curry with Quinoa, Zucchini, and Lime Chutney; and Europe: Grilled Head-on Shrimp with Tomatoes, Roasted Fennel, Olives, and Sea Urchin Butter Sauce.



The dessert menu wasn’t released, but a couple of photos were included.  The dish on the left is listed as Calamansi Mousse and the dish on the right is South American Chocolate Ganache:

Master Sommelier Brian Koziol, Food & Beverage Concept and Development director for Disney Parks & Resorts, had this to say about the beverage menu: “With a focus on South American and South African wines, the beverage program is very special – we don’t have another one like it at Disney. The program will focus on environmentality: producers that focus on sustainability, organic wines, and bio-dynamic viticulture. Environmentality is a core value at Disney’s Animal Kingdom, and this beverage program is a great way to share that with our guests.”

Handcrafted cocktails and beers, as well as non-alcoholic beverages are available from Africa, Asia, and South America. Some of these include “exotic-fruit-flavored lemonades, Asian and African premium loose-leaf teas and coffee beans from Columbia, Ethiopia, Indonesia and Tanzania.”



The restaurant will also feature the Nomad Lounge, with 55 seats inside and 46 seats outdoors. The lounge will serve small bites including a “vegetarian summer roll, a seared Wagyu beef skewer, honey-glazed coriander-spiced pork ribs, Indian butter-chicken wings, seasonal fish balls with shishito peppers and house-made head cheese and chicken liver pate with chutney.”
