Gideon’s Bakehouse is continuing its unique July cookie rollout. Rather than offering a single monthly special, the beloved Disney Springs cookie stop is releasing three limited-edition cookies, each available for just 10 days. With Stuart Valencia’s cookie now retired, the bakery has introduced its second featured flavor of the month (and arguably our all-time favorite flavor): Bonnie Brae’s Lemon Poppyseed Cookie, along with a matching collectible menu and a festive weekend-only treat.
Bonnie’s Lemon Poppyseed Cookie (July 11–20)
Inspired by a classic lemon poppyseed muffin, the cookie features a soft, citrus-infused dough packed with white chocolate pieces. It’s finished with a generous layer of buttery lemon crumbs and a light sugar glaze for an extra burst of sweetness.
The cookie is available at both Gideon’s locations (Disney Springs and East End Market) now through July 20, and is limited to two per guest, while daily supplies last.
One tip from Gideon’s: because of its fragrant lemon flavor, it’s best not to leave this cookie stored alongside the bakery’s other varieties for too long.
To match the new featured cookie, the collectible menu has also changed over to Bonnie Brae’s design. Guests visiting Disney Springs can pick one up while waiting in line, or receive one with eligible online merchandise orders.
Kris Kringle Bites Return for Christmas in July
Gideon’s is also leaning into Christmas in July with the return of Kris Kringle Bites! These bite-sized treats start with a white chocolate coffee bean cookie infused with coconut, caramel, and vanilla bean flavors. The coffee helps balance the sweetness before each cookie is cut into quarters and hand-dipped in white chocolate. A sprinkling of coarse sugar crystals finishes each piece.
Each bag includes six cookie bites and will be available every Saturday and Sunday for the remainder of July.
Like the monthly cookies, Kris Kringle Bites are available at both the Disney Springs and East End Market locations on a first-come, first-served basis. Guests are limited to two bags per person, and quantities are available only while supplies last.
