Salt & Straw switches up their limited edition flavors each month, and this month the new vegan option is Mathilde’s Hibiscus & Coconut Sherbet. This unique flavor is made with Mathilde’s punchy hibiscus, Ginger Brew, and coconut cream. They describe it as a tropical creamsicle in a scoop; the description is spot on.
This was my first trip to this new ice cream spot at Disney Springs, and I was thrilled with the outcome. Not being able to eat dairy anymore has me missing ice cream more than ever, so seeing this new option makes me happy. This flavor is incredibly refreshing, and the temperature keeps rising here in Central Florida, so it’s perfect. The sherbet, like most, was very light and didn’t feel heavy in your stomach after eating it. It is the perfect quick treat to enjoy in the summer sun. The best part was that the employees encouraged everyone to try each flavor before deciding what to get. If I could, I would sit there and try flavors all day.
Salt & Straw also has classic flavors that don’t rotate like the others, and on that menu, they have two vegan options: the Freckled Mint Chocolate Chip and Roasted Pineapple Coconut Sherbet. I’m not fond of the mint flavor, so you will never find me eating the Freckled Mint Chocolate. Those who love mint chocolate ice cream at least have an option; let me know how it is. The Roasted Pineapple Coconut Sherbet option seems exciting and would be great for the summer months. I think this will be the next flavor I get because the description sounds fun. The description says, “Something magical happens when you roast pineapples,” and just from that line, I’m hooked. Overall it’s blended roasted pineapple mixed with coconut cream, and I can’t wait to try it.
