New Mixology Series at Disney Springs with Jameson Irish Whiskey Pairings

Valentine’s Day may be right around the corner, but over at The Edison in Disney Springs, the focus is already shifting toward springtime sips and dinner experiences that promise to pair bold flavours with beautiful views. The March Mixology Series takes place on Thursday, March 19th, 2026, with two seatings available at 5:30 p.m. (Sold Out) and 8 p.m. (Still Available!), right on the tail of St Patrick’s Day. Tickets are priced at around $102 per person, with space limited and adults 21 and older welcome to attend.

This special event pairs three curated cocktails with three thoughtfully matched dinner courses, all inspired by vibrant Irish whiskey flavours and seasonal ingredients that celebrate the arrival of spring. Guests can expect a flavourful lineup showcasing everything from citrus and orchard notes to warm, rich dessert finishes.

Here’s a peek at what’s on the March menu:

• Florida Tea – A bright and refreshing cocktail built with Jameson Orange, peach, orange, and lime, paired with a lobster salad dish.
• Gilded Orchard – Jameson Black Barrel combined with Calvados apple brandy, vanilla syrup, and lemon, served alongside pork chops.
• Barrel and Bean – Jameson Caskmates Stout Edition with vanilla paste, demerara and espresso flavours, matched with warm apple Irish whiskey cake for a sweet finish.

There’s even an optional add-on of a 1 oz pour of Jameson 18-year available for an extra charge, perfect for those who want to elevate the experience even more.
