Details on new pizzeria at Epcot

Details have finally been released on the highly anticipated new restaurant at
Walt Disney World. The 300-seat Via Napoli Risorante e Pizzeria will open in
Epcot's Italy Pavilion next month. The restaurant focuses on Southern Italian cuisine and features three wood-burning ovens named Mount Etna, Mount Vesuvius, and Stomboli (Italy's three active volcanoes).
The Disney Parks Blog has a sneak peek of the menu to whet your appetite. Some of the highlights are an arancini (fried saffron risotto balls) appetizer and a salad of calamari with arugula, carrots and fennel with orange vinaigrette. Being an Italian restaurant, there will be many variations of pastas, topped with a variety of sauces. An exciting addition to Epcot's food offerings will be the wood-fired pizzas. It's interesting to note that the crust on these pizzas will be made as authentically Italian as possible by using caputo flour imported from Southern Italy and handmade mozzarella. The water in the crust will come from a spring whose water is similar to the water in the Campania region of Italy. A dozen pizza choices will be offered. Classic Italian desserts, such as tiramisu and gelato will be a sweet way to round out your meal.
