New menu items have been added to the offerings from Palo, the signature adults-only restaurant onboard the Disney cruise ships.
The first of these new selections is a dish made for sharing – a whole roasted chicken that marinates in lemon, sea salt, and rosemary for 24 hours and is served with roasted baby vegetables, asparagus, and potatoes, all topped with a Barolo wine reduction.
For seafood lovers, a flavorful Dover sole will be filleted tableside and is topped with capers, anchovies, sundried tomatoes, and thyme potatoes.
A sea scallop dish is served with a Prosecco and black truffle reduction.
Seared ahi tuna steaks were already on the menu, but will now be served with blanched green beans, roasted new potatoes, and peppered quail eggs.
In addition to the signature Palo chocolate soufflé, the dessert menu will feature tiramisu and a limoncello tart.
Palo also offers the six-course “Esperienza del Vino” wine pairing menu, which features new dishes as well.
First up is a savory coppa (thinly sliced cured pork neck) on fava beans, topped with pecorino cheese and micro celery. This is served with a Venetian Bellini made with sparkling Prosecco, white peaches, and raspberry.
The following five courses are: gnocchi with nutty cep mushroom sauce,;poached white asparagus with smoked anchovies, quail egg and truffle oil; sea bass with spinach and buckwheat; and beef striploin, aged for 25 days, seared and roasted with rosemary, and served with arugula.
Dessert with the wine pairings menu is mascarpone mousse, served in a white chocolate dome atop rhubarb and grappa sponge cake and consommé jelly.
Some of the wines including in the pairing menu include: Bellavista Franciacorta Cuvee Brut, Elena Walch Gewurztraminer, La Scolca Gavi dei Gavi Black Label, Antinori Tignanello Marchesi and Alexander Platinum Grappa.
Palo has a $30 charge for dinner and an additional $59 for the wine pairing experience.
