Fresh From Florida
Grilled Gator Sausage with Florida Greens and
Lime Vinaigrette
Lime Vinaigrette:
- 1/2
cup Olive Oil
- 1/2
cup Canola Oil
- 1/2
cup White Balsamic Vinegar
- 1/2
oz. Fine Herbs
- 2
oz. Shallots, roasted & pureed
- 1
oz. Sugar
- 3/4
oz. Rose's Lime Juice
- 3/4
oz. Key Lime Juice
- Kosher
Salt
- Ground White Pepper
Gator Sausage Plate:
- 4
ea. Gator Sausage, grilled
- 4
oz. Mixed Greens
- 2
oz. Lime Vinaigrette
- 8 ea. Chives, cut 3/4 inch pieces
Method of Preparation:
In a large mixing bowl, take mixed greens and toss with lime vinaigrette. Bias cut sausage into bite size pieces. Take mixed greens and place into center of plate. Set sausage around greens and garnish with chive sticks.
