When it comes to my snack stops at Disney, I am pretty easy to please. While I try not to eat too much of the sweet stuff during the day, that doesn’t mean I don’t want just about everything that I see. I love a few innovative flavor creations, and I don’t have an aversion to crossing the line on sweet and savory combinations. Yes, that does mean I am guilty of being a pineapple on pizza girl.
Even so, with all of that in mind, this month’s new ice cream flavors at Salt & Straw in Disney Springs and Downtown Disney had my skeptical mind activated when reading the latest offerings. Now, even though some of these feel like a bit of a reach, I’ve had enough successfully odd flavor combinations at Salt & Straw to trust the process and have complete faith that each will be delicious in its own right, even if my taste buds can’t quite manifest the correct response when reading the preview descriptions. Chocolate Chip Zucchini Bread
Summer’s here, which means an unending supply of fresh zucchini just begging to be made into bread. Of course, we pack ours with so much rich, delicious cocoa powder it’s basically cake. Decadent chunks of our chocolate loaf fold into a chocolate chip ice cream spiked with the same aromatic spices that make zucchini bread so craveable: cinnamon, nutmeg, and clove. It’s fresh from the garden meets straight from the oven—best enjoyed in a hot-off-the-iron waffle cone.

Peach Jam Miso Blondies (v)
Blondies, the brownie’s golden alter-ego, take center stage in our newest dairy-free creation. First, our classic butterscotch blondie batter gets an umami edge from a touch of white miso. Once baked to chewy perfection, the diced bars are scattered throughout a toasted coconut cream, further playing up the sweet-meets-savory flavor. Then come the peaches: plump and juicy, cooked until irresistibly jammy, brightened with a squeeze of citrus and fragrant basil. A fresh, fruity pop amid iconic caramelized decadence. Drooling yet?

Pickled Cucumber Sorbet (v)
The pickle-lover’s dilemma: what to do with all the glorious leftover brine once the last spear is gone? A marinade? A salad dressing? Hear us out—sorbet. A refreshing palate cleanser if there ever was one, this flavor harnesses the crisp, clean acidity of Grillo’s pickle brine and amplifies it with fresh puréed cucumber and an herbaceous bouquet of dill. A must-try for tangy snack lovers and a delicious new way to get your pickle fix.

Tomato Gelato with Olive Brittle
Peak tomato season: farmers market stalls overflow with wooden crates brimming with juicy cherry tomatoes, hulking beefsteaks, and imperfect, mottled heirlooms. To capture their vine-ripened intensity, we crush tomatoes with buttery Arbequina olive oil and sharp lemon zest, transforming them into a vibrant, creamy gelato. Dehydrated black olives fold into a caramelized butter brittle, adding a salted-candy crunch to the tomato’s fruitiness. It’s a scoop only summer can deliver.

Melon and Prosciutto
A flavor 2,000 years in the making. The ancient Romans struck the perfect balance of sweet and salty with prosciutto e melone, and the dish has been a mainstay of Italian summer tables ever since. Juicy wedges of ripe cantaloupe, draped in paper-thin slices of dry-cured ham, are both refreshing and indulgent. Inspired by this centuries-old pairing, we’ve crafted two distinct ice creams. First, prosciutto is gently toasted and reduced to a savory salt, then churned with cream, sugar, and honey into a rich, umami-packed candied prosciutto ice cream. It’s paired with a swirl of our fresh cantaloupe ice cream for a bright, fruity contrast that proves the Italians knew exactly what they were doing.

Do you see what I mean? My curiosity is getting the better of me, and this might be one collection that I need to try and sample each one, just to satisfy my disbelief.
